Pulled Pork Preparation

Cook the Pork
In a slow cooker, add the pork shoulder, chopped onion, minced garlic, smoked paprika, salt, and black pepper. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix in the BBQ sauce until well combined.

Assemble the Quesadilla
Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Place one tortilla in the skillet, then layer half of the shredded cheese, followed by a generous portion of the pulled pork, shredded lettuce, and corn salsa. Top with another layer of cheese and place a second tortilla on top.

Cook the Quesadilla
Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese is melted. Carefully flip the quesadilla and cook the other side for another 3-4 minutes.

Repeat the assembly and cooking process with the remaining tortillas and filling.

Cut the quesadillas into wedges and serve warm with guacamole on the side.
