Preparation

    Prepare Sweet Potatoes

    Peel and dice the sweet potatoes into small cubes, about 1/2 inch in size.

    Chop Tomatoes and Basil

    Dice the heirloom tomatoes and roughly chop the fresh basil.

Cooking

    Cook Sweet Potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-15 minutes until they are tender and slightly caramelized, stirring occasionally.

    Add Heirloom Tomatoes

    Once the sweet potatoes are tender, add the diced heirloom tomatoes to the skillet and cook for an additional 3-5 minutes, allowing the tomatoes to soften.

    Incorporate Basil

    Stir in the chopped fresh basil and season with salt and pepper to taste. Remove the skillet from heat and set aside.

    Prepare Eggs

    In a separate non-stick skillet, heat a small amount of oil over medium-low heat. Crack the eggs into the skillet, cooking them until the whites are set but the yolks remain runny, about 3-4 minutes.

Assembly

    Plate the Hash

    Spoon the sweet potato and heirloom tomato mixture onto each plate.

    Add Eggs

    Top each portion of the hash with an over-easy egg.

    Garnish

    Drizzle the basil aioli over the top and sprinkle with grated Parmesan cheese. Serve immediately.
