    Prepare the Steak

    Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.

    Season the Steak

    Pat the steaks dry with paper towels. Drizzle olive oil on both sides of the steaks. Sprinkle salt, black pepper, and garlic powder evenly over both sides. If using, add a sprig of fresh rosemary or thyme on top of each steak.

Cooking

    Heat the Pan or Grill

    Preheat a cast-iron skillet or grill over high heat for about 5 minutes until it is very hot. If using a skillet, you can add a little more olive oil to the pan, but this is optional.

    Cook the Steak

    Place the seasoned steaks onto the hot skillet or grill. Cook for 4-5 minutes on one side without moving them to get a good sear. Flip the steaks and cook for an additional 3-4 minutes for medium-rare, or longer to your desired doneness.

    Rest the Steak

    Once cooked to your liking, remove the steaks from the heat and let them rest on a cutting board for 5-10 minutes. This allows the juices to redistribute throughout the meat.

    Slice the steaks against the grain and serve immediately. Enjoy your perfectly cooked ribeye steak!
