Prepare Chicken

    Prepare Chicken Coating

    In three separate bowls, place the flour in one, beaten eggs in the second, and panko breadcrumbs mixed with salt, black pepper, garlic powder, and paprika in the third.

    Coat Chicken

    Dip each chicken breast first in the flour, shaking off excess, then in the beaten eggs, and finally coat with the panko breadcrumb mixture.

Fry Chicken

    Heat Oil

    In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Chicken

    Carefully place the coated chicken breasts in the hot oil and fry for about 5-7 minutes on each side or until golden brown and cooked through.

    Coat with Buffalo Sauce

    Once cooked, remove the chicken from the oil and let it drain on paper towels. Toss the hot chicken in a bowl with the buffalo sauce until evenly coated.

Prepare Vegetables

    Chop Vegetables

    Finely shred the celery and carrots. Set aside.

    Prepare Lettuce

    Wash and dry the Bibb lettuce leaves.

Make Honey Blue Cheese Mayo

    Mix Ingredients

    In a small bowl, combine the mayonnaise, crumbled blue cheese, honey, and lemon juice. Mix well until smooth.

Assemble Sandwich

    Prepare Buns

    Slice the country white buns in half and toast them lightly if desired.

    Layer Ingredients

    Spread a generous amount of honey blue cheese mayo on the bottom half of each bun. Add a layer of Bibb lettuce, followed by the fried buffalo chicken, and then top with shredded celery and carrots. Finish with the top half of the bun.
