Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix Wet Ingredients
In a mixing bowl, combine the peanut butter, honey, and vanilla extract. Stir until well combined.
Mixing the Dough

Combine Dry Ingredients
In a separate bowl, whisk together the almond flour, baking soda, and salt.

Combine Wet and Dry
Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. If using, fold in the chocolate chips.
Baking

Shape Cookies
Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

Flatten the Cookies
Using the back of a fork, gently press down on each cookie ball to flatten it slightly and create a crisscross pattern on top.

Bake
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
