Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). This ensures that the muffins bake evenly.

  2. 2

    Prepare the Muffin Tin

Grease a mini muffin tin or line it with mini muffin liners to prevent sticking.

Mixing

  1. 3

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

  2. 4

    Combine Wet Ingredients

In another bowl, whisk together the milk, egg, vegetable oil, and vanilla extract until smooth.

  3. 5

    Combine Both Mixtures

Pour the wet ingredients into the dry ingredients. Gently fold together until just combined. Be careful not to overmix; a few lumps are okay.

  4. 6

    Add Optional Ingredients

If desired, fold in chocolate chips or blueberries into the batter.

Baking

  1. 7

    Fill Muffin Tin

Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

  2. 8

    Bake

Place the muffin tin in the preheated oven and bake for 10-12 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  3. 9

    Cool

Remove the muffin tin from the oven and let it cool for a few minutes before transferring the muffins to a wire rack to cool completely.
