Macaron Shells

Buttercream Filling

Method

Macaron Shells

  1. 1

    Sift Dry Ingredients

In a large bowl, sift together the almond flour and powdered sugar until well combined. This will ensure a smooth texture in your macarons.

  2. 2

    Whip Egg Whites

In a clean, dry mixing bowl, beat the egg whites using an electric mixer on medium speed until foamy. Gradually add the granulated sugar while continuing to beat until stiff peaks form.

  3. 3

    Add Food Coloring

If using food coloring, add it to the whipped egg whites and mix until the color is evenly distributed.

  4. 4

    Fold Mixture

Gently fold the almond flour and powdered sugar mixture into the whipped egg whites in three additions. Be careful not to overmix; the batter should flow slowly off the spatula.

  5. 5

    Pipe the Shells

Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto a baking sheet lined with parchment paper, leaving space between each shell.

  6. 6

    Rest the Shells

Let the piped shells rest at room temperature for 30-60 minutes, or until a skin forms on the surface.

  7. 7

    Bake

Preheat the oven to 300°F (150°C). Bake the macarons for 15-20 minutes, or until they have risen and the feet are formed.

  8. 8

    Cool

Allow the macarons to cool completely on the baking sheet before removing them.

Buttercream Filling

  1. 9

    Cream Butter

In a mixing bowl, beat the unsalted butter on medium speed until creamy and smooth.

  2. 10

    Add Sugar and Flavoring

Gradually add the powdered sugar while mixing on low speed. Once combined, add the vanilla extract and milk. Beat until the mixture is light and fluffy.

  3. 11

    Fill the Macarons

Transfer the buttercream to a piping bag and pipe a small amount onto the flat side of a macaron shell. Top with another macaron shell to create a sandwich.
