Harvesting and Preparing Sap

    Collect Fresh Maple Sap

    Drill holes into the trunks of mature maple trees and insert spiles to collect fresh maple sap. Ensure you collect at least 40 liters for syrup production.

    Once collected, filter the sap through a strainer or cheesecloth to remove debris and impurities.

Cooking the Sap

    Boil the Sap

    In a large pot, pour the filtered maple sap and bring it to a boil over medium heat. This process will take several hours, so be patient.

    Monitor the Temperature

    Use a thermometer to monitor the temperature of the sap. When it reaches 104°C (219°F), it is close to turning into syrup.

    Reduce the Sap to Syrup

    Continue boiling the sap until it reduces and thickens to a syrupy consistency. Stir occasionally to prevent burning.
