Preparing the Sweet Potato Hash

    Cook the Sweet Potatoes

    Peel and cube the sweet potatoes into small, even-sized pieces. In a large skillet, heat the olive oil over medium heat. Add the sweet potatoes, salt, and black pepper. Cook for about 10-15 minutes, stirring occasionally, until they are tender and slightly crispy.

    Add Onions and Garlic

    While the sweet potatoes are cooking, finely chop the onion and garlic. Once the sweet potatoes are cooked, add the onion and garlic to the skillet. Cook for an additional 5 minutes, stirring frequently until the onions are translucent.

    Incorporate Heirloom Tomatoes

    Dice the heirloom tomatoes and add them to the skillet. Cook for another 2-3 minutes until the tomatoes are warmed through. Stir in the fresh basil just before serving.

Making the Basil Aioli

    Blend the Aioli

    In a food processor, combine the mayonnaise, fresh basil, lemon juice, and garlic clove. Blend until smooth and creamy. Season with salt to taste. Set aside.

Cooking the Eggs

    Fry the Eggs

    In a separate skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes for over-easy eggs.

Assembling the Dish

    Serve

    On a plate, place a generous portion of the sweet potato hash. Top with an over-easy egg and drizzle with the basil aioli. Garnish with additional fresh basil if desired.
