    Prepare the Portobello Mushrooms

    Clean the Portobello mushrooms with a damp cloth and remove the stems. Marinate them with olive oil, salt, and pepper for about 15 minutes.

    Grill the Red Onions

    Slice the red onion into thick rings. Preheat a grill or grill pan over medium heat. Grill the onion rings for about 5 minutes on each side, or until they are tender and have grill marks.

    Roast the Red Peppers

    If using fresh red peppers, roast them over an open flame or in the oven until the skin is charred. Once done, place them in a bowl and cover with plastic wrap to steam for about 10 minutes, then peel off the skin and slice.

    Grill the Portobello Mushrooms

    Place the marinated Portobello mushrooms on the grill and cook for 5-7 minutes on each side, or until tender and juicy.

Assembly

    Assemble the Sandwich

    Cut the focaccia in half horizontally. Spread a generous layer of pesto sauce on the bottom half. Layer the grilled Portobello mushrooms, grilled red onions, roasted red peppers, goat cheese, and fresh spinach.

    Top and Serve

    Place the top half of the focaccia on the sandwich. Cut into halves or quarters as desired. Serve immediately with your choice of sweet potato fries or a mixed green salad.
