For the Oven Roasted Tomatoes

    Prepare the Tomatoes

    Preheat your oven to 400°F (200°C). Slice the Roma tomatoes in half lengthwise and place them on a baking sheet.

    Season the Tomatoes

    Drizzle the olive oil over the tomatoes and sprinkle with salt, black pepper, and dried oregano. Toss gently to coat.

    Roast the Tomatoes

    Roast in the preheated oven for 25-30 minutes until the tomatoes are soft and slightly caramelized.

For the Roasted Red Pepper Aioli

    Combine Ingredients

    In a blender or food processor, combine the roasted red peppers, mayonnaise, minced garlic, lemon juice, and salt.

    Blend Until Smooth

    Blend until the mixture is smooth and creamy. Taste and adjust seasoning if necessary.

    Transfer to Serving Bowl

    Transfer the aioli to a serving bowl and set aside.

For the Sandwich

    Toast the English Muffins

    Split the English muffins in half and toast them until golden brown.

    Assemble the Sandwich

    Spread a generous amount of roasted red pepper aioli on both halves of the toasted muffins. Place a layer of arugula on the bottom half.

    Add Cheese and Tomatoes

    Top the arugula with sliced Gruyere cheese and a few roasted tomato halves. Place the other half of the muffin on top.

    Melt the Cheese

    In a skillet over medium heat, melt the butter. Place the assembled sandwiches in the skillet, cover, and cook for 3-4 minutes until the cheese is melted and the muffins are crispy.

For the Side Greens

    Prepare the Greens

    In a large bowl, combine mixed greens.

    Dress the Greens

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.

    Toss and Serve

    Pour the dressing over the greens and toss well to coat. Serve alongside the breakfast sandwich.
