Method

Preparation

  1. 1

    Prepare the Peppers

Wash the fresh red chili peppers thoroughly under running water. Remove the stems and any unwanted seeds for a milder sauce.

  2. 2

    Chop the Garlic

Peel the garlic cloves and finely chop them to release their aroma.

Cooking

  1. 3

    Combine Ingredients

In a medium saucepan, add the prepared chili peppers, chopped garlic, white vinegar, salt, sugar, and lemon juice. Stir well to combine.

  2. 4

    Simmer the Mixture

Place the saucepan over medium heat and bring the mixture to a gentle simmer. Let it cook for about 10-15 minutes until the peppers are soft and the mixture thickens slightly.

  3. 5

    Blend the Sauce

Remove the saucepan from heat and allow the mixture to cool slightly. Transfer the mixture to a blender, adding olive oil, and blend until smooth. If using, add smoked paprika and cumin at this stage and blend again.

  4. 6

    Adjust Consistency

If the sauce is too thick, you can add a little more vinegar or water to reach your desired consistency.

Storage

  1. 7

    Store the Sauce

Pour the hot sauce into sterilized glass bottles or jars. Seal tightly and store in the refrigerator for up to 3 months.
