    Activate the Yeast

    In a small bowl, combine warm milk, granulated sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Make the Dough

    In a large mixing bowl, whisk together all-purpose flour and salt. Add the cubed cold butter and mix until the mixture resembles coarse crumbs. Make a well in the center and pour in the yeast mixture and beaten egg. Mix until a dough forms.

    Knead and Chill

    Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth. Shape it into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Laminating the Dough

    Roll the Dough

    On a floured surface, roll out the chilled dough into a rectangle about 1/4 inch thick.

    Incorporate Butter

    Place a sheet of parchment paper on top of the dough and spread out the remaining cold butter into a rectangle on half of the dough. Fold the other half over the butter.

    Fold and Chill

    Roll out the dough again to a rectangle, fold it into thirds like a letter, wrap it in plastic wrap, and refrigerate for another 30 minutes. Repeat this process 2 more times.

Assembling the Croissants

    Cut and Fill

    After the final chill, roll the dough into a large rectangle and cut it into triangles. Place a small amount of chopped chocolate at the wide end of each triangle and roll tightly towards the point.

    Shape the Croissants

    Curve the ends of each rolled croissant towards each other to form a crescent shape. Place on a baking sheet lined with parchment paper.

    Prepare Egg Wash

    In a small bowl, whisk together the beaten egg and milk. Brush the mixture over each croissant.

    Preheat your oven to 400°F (200°C).
