Preparation

    Prepare the Chicken

    Pound the chicken breasts to about 1/2 inch thickness using a meat mallet. Season both sides with salt and black pepper.

    Prepare the Vegetables

    Thinly slice the shallots and mushrooms. Rinse and dry the spinach. Chop the parsley and set aside.

Cooking

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and set aside.

    Pan Fry the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes per side until golden brown and cooked through. Remove from skillet and let rest.

    Sauté the Vegetables

    In the same skillet, add the shallots and mushrooms. Sauté for about 3-4 minutes until softened. Add the spinach and cook until wilted, about 2 minutes.

    Make the Sauce

    Pour in the white wine and bring to a simmer, scraping up any browned bits from the skillet. Stir in the butter until melted and then mix in the parmesan cheese until smooth.

    Combine Everything

    Slice the rested chicken and add it back to the skillet along with the cooked pasta. Toss everything together gently to coat in the sauce. Stir in the chopped parsley before serving.
