Beef and Toppings Preparation

Roast the Beef
Preheat the oven to 325°F (163°C). Season the beef with salt and pepper. Place it in a roasting pan and roast for approximately 1 hour or until the internal temperature reaches 135°F (57°C) for medium-rare. Let it rest for 10 minutes before slicing thinly.

Prepare the Grilled Onions
Slice onions into thin rings. In a skillet over medium heat, add a tablespoon of oil. Add the onions and cook, stirring occasionally, until they are soft and caramelized, about 15-20 minutes.

Prepare the Giardiniera and Roasted Red Peppers
Drain the giardiniera if it's in liquid. Slice the roasted red peppers into strips.
Dijon Aioli Preparation

Make the Aioli
In a bowl, combine mayonnaise, Dijon mustard, minced garlic (or finely grated), and lemon juice. Mix until smooth and well combined. Adjust seasoning with salt and pepper to taste.
Sandwich Assembly

Assemble the Sandwich
Slice the French rolls in half. Spread a generous amount of Dijon aioli on both sides. Layer the sliced roasted beef, grilled onions, giardiniera, roasted red peppers, and Muenster cheese. Close the sandwich and press down gently.

Grill the Sandwich (optional)
If desired, grill the assembled sandwiches on a panini press or in a skillet over medium heat until the cheese melts and the outside is golden brown.
