Preheat the oven
Preheat the oven to 350°F (175°C).

Combine crust ingredients
In a medium bowl, mix together graham cracker crumbs, granulated sugar, and melted butter until well combined.

Shape the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

Bake the crust
Bake the crust in the preheated oven for about 10 minutes or until lightly golden. Remove from oven and let cool.
Filling Preparation

Prepare the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add sugar and sour cream
Gradually add granulated sugar and mix until incorporated. Add sour cream, vanilla extract, and lemon juice, mixing until smooth.

Incorporate eggs
Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

Pour filling into crust
Pour the cheesecake filling over the cooled graham cracker crust and smooth the top with a spatula.

Bake the cheesecake
Bake in the oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool and chill
Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight, before serving.
