Make the Crepe Batter
In a mixing bowl, combine all-purpose flour and salt. Whisk together until well mixed. In another bowl, whisk the eggs and then gradually add the milk while continuing to whisk. Slowly pour the wet mixture into the dry ingredients, whisking until smooth. Let it rest for 30 minutes.

Cook the Crepes
Heat a non-stick skillet over medium heat and add a small amount of butter to coat the pan. Pour 1/4 cup of batter into the skillet, swirling to spread evenly. Cook for 2-3 minutes until the edges lift and the bottom is lightly golden. Flip and cook for another 1-2 minutes. Repeat with remaining batter.

Prepare the Cheese Filling
In a mixing bowl, combine Gruyere cheese, cream cheese, black pepper, and chopped fresh chives. Mix until well combined and creamy.
Assembling the Crepes

Fill and Fold the Crepes
Take one crepe and spread a generous spoonful of the cheese filling onto one half of the crepe. Fold the other half over the filling. Optionally, you can heat the filled crepe in the skillet for 1-2 minutes until warmed through.

Prepare the Side Green Salad
In a large bowl, combine mixed salad greens, halved cherry tomatoes, and sliced cucumber. Drizzle with olive oil and balsamic vinegar. Toss gently to combine. Season with salt and black pepper to taste.
