Crepe Batter Preparation

    Mix the Batter

    In a large mixing bowl, combine the all-purpose flour and salt. In another bowl, whisk together the milk and eggs until well blended. Gradually pour the wet ingredients into the dry ingredients, whisking continuously until smooth. Stir in the melted butter.

    Rest the Batter

    Cover the batter with plastic wrap and let it rest in the refrigerator for at least 30 minutes. This helps improve the texture of the crepes.

Cheese Filling Preparation

    Combine Cheese Ingredients

    In a medium bowl, mix together the softened cream cheese, shredded mozzarella, grated Parmesan, garlic powder, black pepper, and chopped parsley until well combined and creamy.

Crepe Cooking

    Heat the Pan

    Heat a non-stick skillet over medium heat and add 1 tablespoon of butter or oil, swirling to coat the pan evenly.

    Cook the Crepes

    Pour about 1/4 cup of the batter into the hot skillet, tilting the pan to spread the batter evenly. Cook for 2-3 minutes until the edges begin to lift and the bottom is lightly golden. Flip the crepe and cook for another 1-2 minutes on the other side. Remove from the skillet and keep warm. Repeat with the remaining batter, adding more butter or oil as needed.

Filling and Serving

    Spread about 2 tablespoons of the cheese filling onto one half of each crepe. Fold the crepe over the filling and gently press down.
