Mousse Preparation

    Steep Chamomile Tea

    In a small saucepan, bring 1 cup of water to a boil. Add 2 chamomile tea bags and let steep for about 5 minutes. Remove tea bags and let tea cool slightly.

    Melt White Chocolate

    In a heatproof bowl, combine 8 oz of white chocolate chips. Pour the warm chamomile tea over the chocolate and let it sit for 2 minutes. Stir gently until the chocolate is fully melted and smooth.

    Prepare Gelatin

    In a small bowl, sprinkle 2 tsp of gelatin powder over 2 tbsp of cold water. Let it sit for 5 minutes to bloom.

    Combine Gelatin with Chocolate Mixture

    Microwave the bloomed gelatin for about 10 seconds until just melted. Stir it into the white chocolate mixture along with 3 tbsp of sugar, 1 tsp of vanilla extract, and a pinch of salt. Mix until well combined.

    Whip Cream

    In a separate bowl, whip 1 cup of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

    Divide the mousse mixture into serving cups or bowls and refrigerate for at least 2 hours or until set.

    In a medium bowl, combine 1 cup of heavy cream, 2 tbsp of powdered sugar, and 1 tsp of vanilla extract. Whip until soft peaks form.

Serving
