Mousse Preparation

Steep Chamomile Tea
In a small saucepan, bring 1 cup of water to a boil. Add 2 chamomile tea bags and let steep for about 5 minutes. Remove tea bags and let tea cool slightly.

Melt White Chocolate
In a heatproof bowl, combine 8 oz of white chocolate chips. Pour the warm chamomile tea over the chocolate and let it sit for 2 minutes. Stir gently until the chocolate is fully melted and smooth.

Prepare Gelatin
In a small bowl, sprinkle 2 tsp of gelatin powder over 2 tbsp of cold water. Let it sit for 5 minutes to bloom.

Combine Gelatin with Chocolate Mixture
Microwave the bloomed gelatin for about 10 seconds until just melted. Stir it into the white chocolate mixture along with 3 tbsp of sugar, 1 tsp of vanilla extract, and a pinch of salt. Mix until well combined.

In a separate bowl, whip 1 cup of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.
