Cooking Pasta

    Boil the Water

    Fill a large pot with water and add 1 tablespoon of salt. Bring it to a rolling boil over high heat.

    Cook the Spaghetti

    Once the water is boiling, add 400 grams of spaghetti. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the spaghetti, reserve about 1 cup of the pasta cooking water for later use.

    Drain the Pasta

    Drain the spaghetti and set aside, but do not rinse.

Preparing the Sauce

    Cook the Pancetta

    In a large skillet over medium heat, add 150 grams of pancetta or guanciale. Cook until crispy, about 5-7 minutes.

    Prepare the Egg Mixture

    In a bowl, whisk together 4 large eggs, 100 grams of grated Parmesan cheese, and 1 teaspoon of black pepper until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the cooked pancetta, tossing to combine.

    Add Egg Mixture

    Remove the skillet from heat and quickly pour the egg mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.

    Serve

    Serve immediately, garnished with additional Parmesan cheese and freshly cracked black pepper if desired.
