Calamari Preparation

Prepare the Calamari
Rinse the fresh calamari under cold water and pat dry with paper towels. Cut the calamari into rings, about 1/2 inch thick.

Mix Dry Ingredients
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, red pepper flakes, and sugar. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer and let it cook for 15-20 minutes, stirring occasionally, until slightly thickened.

Finish with Parsley
Stir in the chopped fresh parsley just before serving.
