Method
Preparation of Topping
- 1
Prepare the Tomatoes
Wash the ripe tomatoes thoroughly. Remove the stems and core, then dice them into small pieces.
- 2
Mince the Garlic
Peel the garlic cloves and mince them finely using a knife or a garlic press.
- 3
Chop the Basil
Wash the fresh basil leaves, then stack them, roll them up, and slice them thinly (chiffonade) to create small strips.
- 4
Mix the Topping
In a medium bowl, combine the diced tomatoes, minced garlic, chopped basil, salt, and black pepper to taste. Drizzle with 1 tablespoon of olive oil and mix gently. Let it sit for about 10-15 minutes to allow the flavors to meld.
Preparation of Bread
- 5
Slice the Bread
Slice the baguette or Italian bread into 1/2 inch thick slices, diagonally for better presentation.
- 6
Grill the Bread
Preheat a grill or grill pan over medium heat. Brush each slice of bread with the remaining 1 tablespoon of olive oil on both sides. Grill the slices for about 2-3 minutes on each side, or until they are golden brown and have grill marks.
Assembly
- 7
Top the Grilled Bread
Once the bread is grilled, remove it from the grill and let it cool slightly. Spoon the tomato mixture generously over each slice of grilled bread.
- 8
Serve
Arrange the bruschetta on a serving platter and enjoy immediately while the bread is still warm.
