    Prepare the Pork

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the roasted pork loin and ham, season with seasoned salt and black pepper, and cook until heated through, about 5-7 minutes. Remove from heat and set aside.

Pickled Onions and Peppers

    Pickle the Vegetables

    In a small saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and pour over the sliced red onion and bell pepper in a bowl. Let sit for at least 30 minutes to pickle.

Sweet Mustard Aioli

    Make the Aioli

    In a bowl, whisk together mayonnaise, Dijon mustard, honey, and garlic powder until smooth and well combined. Set aside.

Assembly

    Assemble the Sandwich

    Preheat the oven to 350°F (175°C). Slice the French rolls in half and place on a baking sheet. Layer the heated pork mixture, pickled onions, and peppers on the bottom half of each roll. Top with shredded Gruyere cheese. Place in the oven and bake for 10-15 minutes, until the cheese melts and the rolls are slightly toasted. Remove from the oven, drizzle with sweet mustard aioli, and place the top half of the roll on. Serve warm.
