Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C) to prepare for baking the granola.
- 2
Mix Dry Ingredients
In a large mixing bowl, combine the rolled oats, chopped almonds, chopped walnuts, pumpkin seeds, coconut flakes, ground cinnamon, and salt. Stir until well mixed.
- 3
Mix Wet Ingredients
In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until combined.
- 4
Combine Mixtures
Pour the wet mixture into the dry ingredients and stir until all the dry ingredients are evenly coated.
- 5
Add Chia Seeds
Fold in the chia seeds gently until they are evenly distributed throughout the mixture.
Baking
- 6
Spread on Baking Sheet
Line a baking sheet with parchment paper. Spread the granola mixture evenly on the prepared baking sheet.
- 7
Bake the Granola
Place the baking sheet in the preheated oven and bake for 25-30 minutes, stirring every 10 minutes to ensure even browning. Watch closely to prevent burning.
- 8
Cool and Add Dried Apricots
Once golden brown, remove the granola from the oven and let it cool completely on the baking sheet. Once cooled, stir in the chopped dried apricots.
Storage
- 9
Store the Granola
Transfer the cooled granola to an airtight container and store in a cool, dry place. It should stay fresh for up to two weeks.
