Prepare the Egg Mixture
In a large bowl, whisk together the eggs, milk, ground cinnamon, and vanilla extract until well combined.

Coat the Bread
Dip each slice of thick-cut bread into the egg mixture, ensuring both sides are fully coated. Allow excess mixture to drip off.

Cook the French Toast
In a large frying pan, melt the butter over medium heat. Add the coated bread slices and cook each side for about 3-4 minutes, or until golden brown.

Cook the Sauce
Place the saucepan over medium heat and bring the mixture to a simmer. Cook for about 10-15 minutes, or until the rhubarb is tender and the sauce has thickened.

Cool the Sauce
Remove from heat and let the sauce cool slightly before serving.
Vanilla Bean Cream Cheese

Prepare the Cream Cheese
In a mixing bowl, combine the softened cream cheese and powdered sugar. If using a vanilla bean, split it open and scrape the seeds into the bowl; mix until smooth. If using vanilla extract, add it now.
