Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm milk (around 110°F) with sugar and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour and salt.

  3. 3

    Combine Ingredients

Make a well in the center of the flour mixture and add the activated yeast mixture, melted butter, and eggs. Mix until a dough forms.

  4. 4

    Knead the Dough

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

  5. 5

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

Almond Filling Preparation

  1. 6

    Make the Filling

In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add almond flour, almond extract, and the beaten egg. Mix until well combined.

Assembling the Croissants

  1. 7

    Roll Out the Dough

Once the dough has risen, punch it down and roll it out into a large rectangle (about 1/4 inch thick).

  2. 8

    Cut and Fill

Cut the dough into triangles. Place a spoonful of almond filling at the wide end of each triangle and roll it up toward the point.

  3. 9

    Shape the Croissants

Curve the ends of each rolled croissant toward the center to form a crescent shape.

  4. 10

    Second Rise

Place the shaped croissants on a baking sheet lined with parchment paper, cover lightly, and let rise for another 30-45 minutes.

Baking

  1. 11

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 12

    Add Toppings

Sprinkle the sliced almonds over the top of the croissants.

  3. 13

    Bake

Bake the croissants in the preheated oven for 15-20 minutes or until golden brown.

  4. 14

    Cool and Dust

Remove from the oven and let cool slightly. Dust with powdered sugar before serving.
