Preparation of Tostones

Fry the Plantains

In a large skillet, heat the vegetable oil over medium-high heat. Peel the green plantains and cut them into 1-inch thick slices. Fry the plantain slices for about 3-4 minutes on each side until they are golden and cooked through. Remove them from the oil and place them on a paper towel to drain excess oil.

Smash the Plantains

Once the plantains are cool enough to handle, use the bottom of a flat dish or a plantain press to smash each slice to about 1/2 inch thickness.

Second Frying

Return the smashed plantains to the hot oil and fry them again for another 2-3 minutes on each side until they are crispy and golden brown. Remove and drain on paper towels, then sprinkle with salt.

Blend Ingredients

In a blender, combine the tomatillos (husked and rinsed), ripe avocado, lime juice, cilantro, and salt. Blend until smooth and creamy. Adjust seasoning if necessary.
