Prepare the Dough

Heat vegetable oil in a deep pot to 350°F (175°C). Using a pastry bag with a star tip, pipe small rounds of dough into the hot oil. Fry until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.
Coat the Churros

Cinnamon Sugar Coating
In a bowl, combine granulated sugar and cinnamon. Roll the fried churro bombs in the cinnamon sugar mixture until well coated.
Prepare the Banana Crème Anglaise

Make the Sauce
In a saucepan, heat heavy cream and milk until just simmering. In a bowl, whisk together sugar and egg yolks. Gradually add hot cream mixture to the egg yolks, whisking constantly. Return to the saucepan and cook over low heat until thickened. Blend in ripe bananas and vanilla extract until smooth. Strain if desired.

Serve churro bombs warm with a side of sweetened condensed milk for dipping and drizzle the banana crème anglaise over the top.
