Method
Preparing the Charred Poblano Cream Sauce
Char the Poblano
Roast the poblano pepper over an open flame until charred. Place it in a bowl, cover with plastic wrap, and let it steam for 10 minutes. Peel and chop.
Make the Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add heavy cream, charred poblano, salt, and pepper, and simmer for 5 minutes until thickened.
Cooking the Potatoes
Fry the Potatoes
In a frying pan, heat oil over medium heat. Add the potatoes and fry until crispy, about 15-20 minutes, stirring occasionally.

Press the Sandwich
Heat a panini press or skillet over medium heat. Place the sandwich in and press down until the cheese is melted and the bread is golden brown, about 5 minutes.
