Pork Carnitas Preparation

Slow Roast the Pork
Preheat your oven to 300°F (150°C). In a large roasting pan, combine the pork shoulder, orange juice, lime juice, garlic, cumin, salt, black pepper, and bay leaves. Cover tightly with aluminum foil and roast for about 4-5 hours, or until the pork is tender and easily shredded.

Shred the Pork
Remove the pork from the oven and let it cool slightly. Shred the meat with two forks and discard any large pieces of fat and the bay leaves.

Make the Guacamole
In a bowl, mash the avocados. Stir in lime juice, salt, diced tomatoes, cilantro, and jalapeño. Mix until combined and adjust seasoning to taste.
