Method

Grilled Cheese Sandwich

    Prepare the Bread

    Spread butter on one side of each slice of brioche bread.

    Assemble the Sandwich

    Layer Havarti cheese and smoked cheddar cheese between two slices of brioche, ensuring the buttered side is facing outwards.

    Cook the Sandwich

    Heat a skillet over medium heat and place the sandwich in the skillet. Cook for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.

    Add Garlic and Onion

    In the last minute of cooking, sprinkle the pressed garlic and chopped onion on the top slice of the sandwich and cover with a lid to steam slightly.

    Remove and Slice

    Once cooked, remove the sandwich from the skillet, slice in half, and set aside.

Roasted Smoked Tomato Cheddar Soup

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Roast the Tomatoes

    Place halved tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast in the oven for 25-30 minutes until caramelized.

    Blend the Soup

    In a large pot, combine the roasted tomatoes, vegetable broth, and smoked cheddar cheese. Use an immersion blender to puree the mixture until smooth. Alternatively, you can transfer to a blender in batches.

    Heat the Soup

    Place the pureed soup back on the stove over medium heat, stirring occasionally. Add fresh basil and adjust seasoning with salt and pepper to taste.
