Prepare the Ground Beef

In a bowl, season the ground Angus beef with salt and black pepper. Mix gently until the seasoning is evenly distributed.

Form the Patties

Divide the seasoned beef into two equal portions and shape them into burger patties, making a slight indentation in the center of each patty to prevent puffing during cooking.

Cook the Burgers

Heat a skillet or grill over medium-high heat and add olive oil. Once hot, place the burger patties on the skillet and cook for about 4-5 minutes on one side. Flip the patties and add a slice of smoked cheddar cheese on top. Cook for an additional 4-5 minutes for medium doneness.

Prepare the Egg

In a separate non-stick skillet, crack the eggs and cook them over easy, about 2-3 minutes on each side, or until the whites are set but the yolk remains runny.

Toast the Buns

While the burgers and eggs are cooking, slice the brioche buns in half and lightly toast them on the grill or in a toaster until golden brown.

Assemble the Burger

On the bottom half of each toasted brioche bun, layer shredded lettuce, sliced tomato, pickles, and red onion. Place the cooked burger patty with cheese on top, followed by the over-easy egg. Top with the other half of the bun.

Serve the hatch cheeseburger immediately while hot, with additional pickles or condiments on the side if desired.
