Method

Burger Patties

1

Prepare the Burger Patties

In a mixing bowl, combine the ground beef, salt, black pepper, and garlic powder. Mix gently until just combined.

2

Shape the Patties

Divide the mixture into two equal portions and shape each into a patty, making a slight indentation in the center to prevent puffing while grilling.

Grilled Green Chiles

3

Grill the Chiles

Preheat a grill or grill pan over medium-high heat. Toss the fresh green chiles with olive oil and grill them for about 5-7 minutes, turning occasionally, until the skin is charred and blistered.

4

Peel and Slice

Remove the chiles from the grill, place them in a bowl, cover with plastic wrap, and let them steam for about 10 minutes. Once cooled, peel off the skin, remove the seeds, and slice them open.

Green Chile Hollandaise

5

Prepare the Hollandaise

In a heatproof bowl, whisk together the egg yolks and lime juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.

6

Add the Butter

Gradually whisk in the melted butter until the sauce is smooth and creamy. Stir in the chopped green chiles and season with salt to taste.

Eggs

7

Cook the Eggs

In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes.

Burger Assembly

8

Grill the Burger Patties

Grill the shaped patties over medium-high heat for about 4-5 minutes on each side, or until cooked to your desired doneness. In the last minute, place a slice of cheese on each patty to melt.

9

Assemble the Burger

On each burger bun, place a lettuce leaf, followed by the grilled patty with melted cheese, grilled green chiles, and a couple of tomato slices. Top with a generous drizzle of green chile hollandaise and finish with the top half of the bun.
