Burger Patties
Prepare the Burger Patties
In a mixing bowl, combine the ground beef, salt, black pepper, and garlic powder. Mix gently until just combined.
Shape the Patties
Divide the mixture into two equal portions and shape each into a patty, making a slight indentation in the center to prevent puffing while grilling.

Prepare the Hollandaise
In a heatproof bowl, whisk together the egg yolks and lime juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.
Add the Butter
Gradually whisk in the melted butter until the sauce is smooth and creamy. Stir in the chopped green chiles and season with salt to taste.

Cook the Eggs
In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes.
Burger Assembly
Grill the Burger Patties
Grill the shaped patties over medium-high heat for about 4-5 minutes on each side, or until cooked to your desired doneness. In the last minute, place a slice of cheese on each patty to melt.
Assemble the Burger
On each burger bun, place a lettuce leaf, followed by the grilled patty with melted cheese, grilled green chiles, and a couple of tomato slices. Top with a generous drizzle of green chile hollandaise and finish with the top half of the bun.
