Preparing the Benedict Base

    Toast the Sourdough

    Toast the sourdough bread slices until golden brown.

    Prepare Piquillo Peppers

    Lay a slice of piquillo pepper on each slice of toasted sourdough.

    Add Goat Cheese

    Spread Texas goat cheese evenly over the piquillo peppers.

Cooking the Steak

    Season the Steak

    Season the tenderloin steak with salt and black pepper on both sides.

    Sear the Steak

    In a hot skillet, sear the steak for 3-4 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

    Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Making the Hollandaise Sauce

    Whisk Egg Yolks

    In a heatproof bowl, whisk the egg yolks and lemon juice together until frothy.

    In a saucepan, melt the butter over low heat until just melted. Remove from heat.

    While whisking continuously, slowly drizzle the melted butter into the egg yolk mixture until emulsified.

Crispy Peppers

Assembling the Dish

    Thinly slice the rested tenderloin steak.
