Preparing the Benedict Base

Toast the Sourdough
Toast the sourdough bread slices until golden brown.

Prepare Piquillo Peppers
Lay a slice of piquillo pepper on each slice of toasted sourdough.

Add Goat Cheese
Spread Texas goat cheese evenly over the piquillo peppers.
Cooking the Steak

Season the tenderloin steak with salt and black pepper on both sides.

Making the Hollandaise Sauce

Whisk Egg Yolks
In a heatproof bowl, whisk the egg yolks and lemon juice together until frothy.

Add Cream Cheese
Stir in the cream cheese until smooth, then add a pinch of salt to taste.
Crispy Peppers

Slice the Steak
Thinly slice the rested tenderloin steak.

On each slice of the prepared sourdough, layer the sliced steak on top of the goat cheese.

Generously drizzle the cream cheese hollandaise sauce over the steak.
