Directions

  1. 1

    Prepare the Hash Browns

If using fresh potatoes, peel and shred them. If using frozen, skip this step. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the hash browns, season with salt, pepper, garlic powder, and paprika, and cook until golden brown and crispy, about 5-7 minutes per side. Remove from heat and keep warm.

  2. 2

    Cook the Steak

Season the tenderloin steak with salt and black pepper on both sides. In the same skillet used for the hash browns, add 1 tablespoon of olive oil over medium-high heat. When hot, add the steak and cook for 4-5 minutes for medium-rare, or to your desired doneness. Flip the steak and add butter to the skillet. Baste the steak with the melted butter for additional flavor. Remove from skillet and let rest for 5 minutes before slicing.

  3. 3

    Cook the Eggs

Using the same skillet, reduce heat to medium. Crack the eggs into the skillet and cook to your liking: sunny-side up, over-easy, or scrambled. Season with salt and pepper. This should take about 3-5 minutes.

  4. 4

    Plate the Dish

Slice the rested steak and place it on a plate. Add the hash brown tumblers and eggs on the side. Serve immediately while everything is hot.
