Chicken Preparation

Marinate the Chicken
In a bowl, combine the chicken breasts with Cholula hot sauce, olive oil, garlic powder, salt, and black pepper. Ensure the chicken is evenly coated. Cover and refrigerate for at least 30 minutes.

Cook the Chicken
Boil the marinated chicken breasts in a pot of water for about 20 minutes or until fully cooked. Remove from water and let rest before slicing.

Prepare the Battering Station
Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with smoked paprika.

Fry the Battered Eggs
In a large skillet, heat vegetable oil over medium heat. Once hot, carefully add the battered eggs and fry until golden brown on all sides, about 4-5 minutes. Remove and drain on paper towels.

Melt the Cheese
Sprinkle the shredded cheddar cheese over the fried eggs while they are still hot, allowing it to melt slightly.
Fried Hollandaise

Prepare the Hollandaise
In a small saucepan, melt the unsalted butter over low heat. In a separate bowl, whisk together the egg yolks and lemon juice until frothy.

Combine and Cook
Slowly drizzle the melted butter into the yolk mixture while whisking continuously until the sauce thickens. Season with salt to taste.

Fry Hollandaise
Heat the hollandaise sauce in a pan for a minute or two, stirring constantly to achieve a warm, thin consistency.
