Prepare the French Fries
Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully add the French fries in batches and fry until golden brown and crispy, about 4-5 minutes per batch. Remove fries and drain on paper towels.

Prepare the Gravy
In a saucepan over medium heat, heat the gravy until hot, stirring occasionally. If using store-bought gravy, follow the instructions on the package for heating.

Assemble the Poutine
Place a portion of hot French fries on a plate. Top with cheese curds and pour hot gravy over the fries and curds. Sprinkle chopped chives on top and serve immediately.

Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

In a large bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk together until evenly mixed.
