Making the Pancakes

    Prepare the Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

    Combine the Wet Ingredients

    In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

    Mix the Batter

    Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix; a few lumps are okay.

    Heat the Griddle

    Preheat a griddle or non-stick skillet over medium heat. Lightly grease it with a bit of butter or cooking spray.

    Cook the Pancakes

    Pour about 1/4 cup of the batter for each pancake onto the griddle. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes.

    Flip and Finish

    Carefully flip the pancakes using a spatula and cook for another 1-2 minutes, until golden brown. Repeat with remaining batter.

    Serve warm, stacked two at a time on a plate, with whipped butter on top.
