    Start by gathering all the ingredients. Dice the red and green bell peppers, onion, and corn tortillas into small pieces. Set aside.

    Cook the Chorizo

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Chorizo Rosa pork sausage and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.

    Add the diced onion and bell peppers to the skillet with the sausage. Continue to sauté for another 3-4 minutes until the vegetables are tender.
