Prep the Potatoes
Peel the russet potatoes and grate them using a box grater or food processor. Rinse the grated potatoes in cold water to remove excess starch and then drain well.

Cook the Hash Browns
Heat vegetable oil in a large skillet over medium heat. Add the grated potatoes and spread them evenly in the skillet. Season with salt and pepper. Cook until crispy and golden brown, about 5-7 minutes on each side. Once cooked, remove and drain on paper towels.

Prepare the Toppings
In a mixing bowl, combine the crumbled bacon and chopped chives. Set aside for later use.

Add Cheese
Sprinkle shredded smoked cheddar cheese over the crispy hash browns while they are still hot, allowing the cheese to melt slightly.
Hollandaise Sauce

Make the Hollandaise
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler method) and whisk constantly until the mixture thickens and becomes pale.

Finish the Sauce
Slowly drizzle in the melted butter while continuing to whisk until the sauce is thick and creamy. Season with salt and cayenne pepper to taste.

Assemble the Loaded Tumblers
Place a layer of crispy hash browns in the bottom of each tumbler. Top with the bacon and chive mixture, then drizzle with the smoked cheddar hollandaise sauce. Repeat the layers if desired, finishing with hollandaise on top.
