Guacamole

    Prepare the Avocados

    Cut the ripe avocados in half, remove the pits, and scoop the flesh into a mixing bowl.

    Mash the Avocados

    Using a fork or potato masher, mash the avocados to your desired level of creaminess.

    Add Ingredients

    Stir in lime juice, chopped red onion, chopped cilantro, finely chopped jalapeño, salt, and black pepper until well combined.

    Taste and Adjust

    Taste the guacamole and adjust seasoning if needed, adding more salt or lime juice to taste.

Salsa

    Prepare the Tomatillos

    Husk and chop the Chieftain's tomatillos, and place them into a mixing bowl.

    Add Remaining Ingredients

    Add minced garlic, lime juice, chopped cilantro, and salt to the tomatillos.

    Mix and Taste

    Mix all ingredients together and taste; adjust seasoning with more salt if necessary.

Braised Crispy Pork

    Sear the Pork

    Heat olive oil in a large pot over medium-high heat. Season the pork shoulder with salt and black pepper, then sear on all sides until browned, about 5-7 minutes.

    Add Aromatics

    Add chopped onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.

    Braise the Pork

    Pour in chicken broth, cover the pot, and reduce heat to low. Let it braise for about 2-3 hours or until the pork is tender and easily shredded.

    Crisp the Pork

    Remove the pork from the pot, shred it, and then place it under a broiler for 3-5 minutes to crisp the edges.

    In a non-stick skillet, melt butter over medium heat.
