Preparation Instructions

Prepare the Red Grits
In a large saucepan, bring 4 cups of water to a boil. Gradually whisk in 1 cup of red grits. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes, or until grits are thick and creamy. Stir in 1 cup of milk and 2 tablespoons of butter until fully combined. Season with salt to taste.

Make the Chipotle & Chives Hollandaise
In a heatproof bowl, whisk together 3 egg yolks, 1 tablespoon of lemon juice, and 1 tablespoon of water. Place the bowl over a pot of simmering water (double boiler method). Slowly whisk in 1 cup of melted butter until the mixture is thick and creamy. Stir in 1 teaspoon of chipotle powder and season with salt. Keep warm.

Prepare the Crispy Braised Pork
In a skillet over medium heat, add the crisped pork belly and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Poach the Eggs
In a separate pot, bring water to a gentle simmer and add 1 tablespoon of white vinegar. Crack the eggs into individual bowls and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes, or until the whites are set but yolks remain runny. Remove with a slotted spoon and drain on paper towels.
