Preparing Shallots and Salmon

    Prepare the Shallots

    Peel and thinly slice the shallots. If desired, soak them in cold water for about 10 minutes to mellow their flavor, then drain.

    Prepare the Smoked Salmon

    Slice the smoked salmon into bite-sized pieces and set aside.

    Prepare the Capers

    Rinse the capers under cold water to remove excess saltiness and set aside.

Making Red Toasted Onions

    Toast the Red Onions

    Slice the red onion thinly. Heat olive oil in a skillet over medium heat, add the sliced onions, and sauté until they are caramelized and golden brown, about 10-15 minutes. Stir occasionally to prevent burning.

    Once the onions are caramelized, sprinkle the everything bagel seasoning over them and stir well to combine. Remove from heat and set aside.

Assembling the Bagels
