Tenderize the Steaks
Prepare the beef cube steaks by tenderizing them with a meat mallet.

Marinate in Buttermilk
In a shallow dish, combine the buttermilk, salt, and black pepper. Soak the tenderized steaks in the buttermilk mixture for at least 30 minutes.

Dredge in Flour
In another shallow dish, place the flour. Remove the steaks from the buttermilk and dredge them in the flour, ensuring they are fully coated.

Fry the Steaks
In a large skillet, heat the vegetable oil over medium heat. Once hot, fry the coated steaks for about 4-5 minutes per side or until golden brown. Remove and set aside.

Make Roux
In the same skillet used for the steaks, reduce the heat to low, and add 1 tablespoon of flour. Stir constantly for about 1 minute until the flour is lightly browned.

Prepare Gravy
Gradually whisk in the milk, stirring continuously to prevent lumps. Increase heat to medium and cook until the gravy thickens.

Season the Gravy
Add black pepper and salt to taste. Stir well and remove from heat.
Hash Brown Tumblers

Heat Oil
In a skillet, heat 1 tablespoon of vegetable oil over medium heat.

Cook Hash Browns
Add hash brown potatoes and season with salt. Cook until they are crispy and golden brown, about 5-7 minutes, stirring occasionally.

Remove from heat and keep warm while you prepare the eggs.
