Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk together until well combined.

Cut in Butter
Add the cold unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir gently until just combined. Do not overmix.

Shape Biscuits
Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Cut out biscuits using a biscuit cutter or a glass.

Bake Biscuits
Place the biscuits on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until golden brown.
Gravy

Cook Sausage
In a large skillet over medium heat, add the breakfast sausage. Cook until browned and crumbled, about 5-7 minutes. Drain excess fat if necessary.

Make Roux
Sprinkle the flour over the cooked sausage. Stir well to coat the sausage with flour and cook for about 1-2 minutes.

Add Milk
Gradually whisk in the milk, stirring constantly to prevent lumps. Bring the mixture to a gentle simmer.

Season the Gravy
Add black pepper and salt to taste. Continue to cook, stirring frequently, until the gravy has thickened, about 3-5 minutes.
