Dough Preparation

    Activate the Yeast

    In a small bowl, combine the warm water (110°F to 115°F) with the active dry yeast and granulated sugar. Let it sit for about 5-10 minutes until it becomes frothy.

    In a large mixing bowl, whisk together the all-purpose flour and salt.

    Combine Wet Ingredients

    In a separate bowl, whisk the egg, milk, and melted unsalted butter together. Once the yeast has activated, add it to the wet ingredients.

    Form the Dough

    Pour the wet ingredients into the dry ingredients and mix until a sticky dough forms. Knead the dough for about 5-7 minutes on a floured surface until smooth.

    Let the Dough Rise

    Place the kneaded dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

Frying and Glazing

    In a deep fryer or a large pot, heat oil to 350°F (175°C). Use enough oil to submerge the beignets completely.

    Once the dough has risen, punch it down and roll it out to about 1/4 inch thick. Cut the dough into squares (about 2 inches by 2 inches).

    Carefully drop the squares into the hot oil, a few at a time, and fry until golden brown on both sides, about 2-3 minutes per side. Remove them with a slotted spoon and drain on paper towels.
