Preparing the Tuna Tartare

Chop the Tuna
Using a sharp knife, cut the sushi-grade tuna into small, uniform cubes, approximately 1/4 inch in size. Place the chopped tuna in a mixing bowl.

Chop the Cilantro
Rinse the cilantro under cold water, pat dry with a paper towel, then finely chop the leaves. Add it to the mixing bowl.

Prepare the Dressing
In a separate small bowl, combine the soy sauce, sesame oil, grated fresh ginger, and lime juice. Mix well.

Combine the Ingredients
Pour the dressing over the tuna mixture. Gently toss all ingredients together until well combined. Season with salt and black pepper to taste.
Making the House Chips

Preheat Oven
Preheat your oven to 375°F (190°C).

Prepare the Chips
Spread the tortilla chips on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with salt.

Bake the Chips
Bake in the preheated oven for about 8-10 minutes or until they are crispy and lightly golden. Keep an eye on them to avoid burning.

Remove the chips from the oven and let them cool slightly before serving alongside the tuna tartare.
