Pasta Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well along with the olive oil. Using a fork, gradually incorporate the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling Preparation

    Sauté the Vegetables

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped shallots and sauté until translucent, about 3 minutes. Add the finely chopped mushrooms and cook until browned, about 5-7 minutes.

    Combine the Filling Ingredients

    In a bowl, mix the sautéed shallots and mushrooms with sweet corn, fava beans, grated Parmesan cheese, salt, and pepper. Stir until well combined.

Ravioli Assembly

    Roll Out the Dough

    After resting, divide the pasta dough into four pieces. Roll out each piece into a thin sheet using a pasta machine or rolling pin.

    Fill the Ravioli

    Place small spoonfuls of the filling on one sheet of pasta, leaving space between each. Moisten the edges with water and fold the dough over to create a pocket. Press to seal, ensuring there are no air bubbles.

    Cut the Ravioli

    Using a knife or ravioli cutter, cut out individual ravioli. Set aside on a floured surface.

Cream Sauce Preparation

    Make the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream, and season with salt and black pepper. Let it simmer for about 5 minutes.

    Add Tomatoes and Basil

    Add halved cherry tomatoes and chopped basil to the sauce, cooking for an additional 3-5 minutes until the tomatoes are slightly softened.

Cooking and Serving

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the ravioli and drizzle the cream sauce over the top. Garnish with additional basil if desired.
