Preparation of the Beef

    Prepare the Beef

    Finely chop the grass-fed beef tenderloin using a sharp knife. Aim for a mince-like consistency, but avoid using a food processor to maintain the texture.

    Season the Beef

    In a mixing bowl, combine the chopped beef with salt and freshly cracked black pepper to taste. Drizzle the truffle oil over the mixture and gently fold it in until evenly combined.

    Add Parmesan

    Grate the Parmesan cheese and fold it into the beef mixture, reserving a small amount for garnish.

Assembly

    Prepare Quail Egg

    Carefully crack the quail egg and separate the yolk from the white. Discard the egg white or save it for another use.

    Plate the Tartare

    Using a ring mold, carefully pack the seasoned beef mixture into the mold on a serving plate. Gently lift the mold off to leave the beef in a neat shape.

    Add Egg Yolk

    Place the quail egg yolk on top of the beef tartare for an elegant presentation.

    Garnish

    Sprinkle the reserved grated Parmesan over the top of the tartare and drizzle a little extra truffle oil if desired.

    Serve the steak tartare with toasted grilled bread on the side for scooping. Enjoy immediately.
