Prepare the filling
In a food processor, combine the spring peas, fava beans, ricotta cheese, grated Parmesan, salt, and black pepper. Pulse until the mixture is smooth but still has some texture. Set aside.

Make the dough
On a clean surface, make a mound with the all-purpose flour and create a well in the center. Crack the eggs into the well, add salt, and gradually mix the flour into the eggs using a fork. Knead the dough for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Form the ravioli
Roll out the dough into thin sheets using a pasta machine or rolling pin. Place small mounds of the filling on one sheet, leaving space between each mound. Brush the dough around the filling with water, then place another sheet of dough on top and press down to seal. Cut into squares or circles using a knife or ravioli cutter.

Cook the ravioli
Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and set aside.
